Veggie Chip Recipes

I am finding there are two methods for making Veggie Chips, low and slow or hot and fast!

For both methods you start with slicing your veggie fairly thin and patting them dry with a paper towel.

Then coating with some sort of oil.  I prefer the spray oil.

Then sprinkle very lightly with seasonings of your choice.  I like salt, pepper and garlic, oh and I really love onion powder.  My boys "don't like onions", but some how they love everything I make that has onion powder in it.  :)

So here is where the two methods differ:

Low and Slow; says heat oven to 225 degrees for about 2 hours.

OR

Hot and Fast; says heat oven somewhere between 375 and 425 degrees for about 20-30 mins.

So before researching I tried carrots and yellow squash at 350 degrees for about 30 mins.  They came out okay but the thinner pieces were a little over cooked.  And I learned less seasonings the better as the veggies shrink a lot and condense the seasonings flavor.  Although the carrots where suprisingly very very yummy!  I will be doing them again for sure.

We shall see how the next batch comes out.
